Fasolakia—Greek String Beans*


1 large onion

A few cloves of garlic

Olive oil

1 can tomatoes (about 15 oz./400+ g.)

Three bunches of fresh green beans/string beans

Fresh parsley

Fresh dill

Fresh mint

Salt and pepper

 

Clean and cut the green beans about 4-5 cm long. Saute together chopped garlic and onion in olive oil until soft.  Add tomatoes and green beans, then some parsley, dill, and mint, preferably fresh but dried will do if you cannot find the fresh.  Then add salt and pepper to taste.  Cook all of this together on low heat about ½ hour, until the beans are cooked and the flavours are blended. Can be served alone or with any pasta (as with macaroni, shown above).
