Green Seafood Curry*


2 packages Thai green curry paste

2 cans (about 400-500 g. each) coconut milk

Olive oil

2 large onions

About 500 g. cleaned shrimp

About 500 g. squid, cut in pieces

About 300 g. okra, cut into pieces

About 300 g. mushrooms

2 large potatoes, cubed

Fish sauce

Salt and pepper

4 cups jasmine rice, cooked

 

As with Thai curries, start by squeezing the curry paste into a large pot and mix together with a generous portion of oil.  Cook this together for a few minutes, mixing constantly to prevent burning.  This process releases the flavours of the spices into the oil.  Then add coconut milk.  After this, add the onions, seafood, and potatoes, then the okra and mushrooms.  Add black pepper, salt, and fish sauce to taste. Cook until all ingredients are done and the flavours have the opportunity to blend.  Serve with jasmine rice.
