Meatless Spaghetti Sauce


2 large onions

2 large green peppers

A few cloves of garlic

Olive oil

About 500 g. mushrooms

1 can (about 400-500 g.) tomato sauce

Oregano*

Basil

Few sprigs of fresh parsley roughly chopped

A little sugar

Salt and pepper

A few chili peppers (optional of you want it spicier)

Pasta, any kind as you like

 

Saute together chopped garlic, onion, mushrooms, and peppers in olive oil until soft.  Add tomato sauce and shopped parsley, then a few shakes each of oregano, basil, sugar, salt and pepper to taste.  Chop up a few chili peppers/hot peppers to add if you like it spicy.  When all the ingredients have cooked and blended together well, add the water you will need, bring to a boil, then rinse and add about 1½ cups of rice.  Make sure the rice is mixed in well and covered with liquid.  Cook on low for about ½ hour, until the rice is cooked.

 

*Instead of or in addition you can add thyme, marjoram, savory, or any other herb to your taste
