Hazelnut Cookies


¾ cup butter

¾ cup sugar

1 egg

1 teaspoon vanilla

2 cups flour

1 cup chopped or ground hazelnuts

 

With electric mixer combine butter, sugar, egg, and vanilla.  With spoon, stir in flour and hazelnuts.  Shape into a long roll about 4 – 5 cm in diameter, cover and put into the refrigerator at least 2 hours (or overnight).  When ready to bake, slice the roll into ¼ inch thick slices and place on ungreased cookie sheets.  Bake at about 160C 12-15 minutes, until the edges start to turn brown.  Remove and cool.
