Good Slovak Raisin Cake


1 pound raisins (or one large box)

1½ cups sugar

1½ cups water

2 beaten eggs

½ cup butter (one stick)

2 ½ cups sifted flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

½ teaspoon cloves

½ teaspoon allspice

 

 

Open raisin box and clean any stems off the raisins.  Boil together raisins, sugar, and water for 5 minutes, remove from heat, add butter (which will melt in).  Let this mixture cool.

Separately, mix all the dry ingredients and sift together three times.

Add eggs to raisin mixture.  Stir in flour mixture little by little and mix well.

Grease a 10 X 13 inch pan.  Put a spoon of flour into the pan and shake it around so that the whole surface of the pan has a fine layer of flour.  Then add the mixture to the pan.  Bake for about 45 minutes at low heat (about 160C).  Remove and cool.  Store in refrigerator for good taste.
